Last night I tried out a Dairy Free Mac and Cheese. I was hopeful when I purchased the stuff... maybe it would be good, and when I was craving some cheesy goodness, that I could pop some of that stuff on the stove, but I was way wrong!!
Also, I had a dream last night that I was cooking with Rachel Ray, and I ate this goat cheese thing. I woke up freaked out that I had actually eaten it. I hate these dreams!!

I love your dairy filled dreams, not because cheese seems to be haunting you, but because it shows what a huge deal this is for you.
ReplyDeleteWhen I buy the vegan mac & cheese I always, always, ALWAYS fiddle with it. I use extra earth balance and usually stir in some better than cream cheese or better than sour cream.
I say google "vegan mac and cheese" until you find a recipe that inspires you. Until then know I'm cheering for you and that, should you ever cook with Rachel Ray, she will be nice enough to serve you something dairy free.
Boy do I love you!!!! You are something. I think you are dreaming about Rachel Ray because one day you will have your own TV show! Signing off from Texas... Sooner rather than later!

ReplyDeleteSunday afternoon up at the cabin... drinking some Throat Coat Tea - and thinking about you. Over a week has gone by - WAY TO GO!!!!! Last night we had a celebration for Katie VR's 25th bday and met at a Japanese restaurant. So yummy! Udon noodles which were about as big around as my little finger - in rich broth with some egg and grilled tofu and lots of flavor... and not a cow product in sight! I think you should schedule you and me for celebratory pedicures when I am over there for your bday... what do ya think?
